Fresh Strawberry Pie is a refreshing dessert that showcases sweet, juicy strawberries in a glossy homemade glaze nestled inside a buttery pie crust. Served chilled, it’s a simple yet elegant treat that’s perfect for spring and summer gatherings.

Ingredients

  • 1 baked 9-inch pie crust, cooled
  • 5 cups fresh strawberries, hulled
  • 3/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/2 cup water
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • Whipped cream, optional for serving
  • Fresh mint leaves, optional garnish
  • Extra fresh strawberries, optional garnish

Instructions

  1. Arrange about 4 cups of the whole strawberries evenly inside the cooled pie crust.
  2. Chop the remaining strawberries and place them in a saucepan with the granulated sugar, water, and cornstarch.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy.
  4. Remove the saucepan from the heat and stir in the lemon juice and vanilla extract.
  5. Allow the glaze to cool for 10–15 minutes until warm but not hot.
  6. Pour the glaze evenly over the strawberries in the pie crust, coating the berries completely.
  7. Refrigerate the pie for at least 4 hours, or until fully set.
  8. Garnish with whipped cream, fresh strawberries, or mint leaves if desired before slicing and serving.

  • Use fresh strawberries for the best texture and appearance.
  • Make sure the pie crust is fully baked and completely cooled before filling.
  • A graham cracker crust can be substituted for a different flavor and texture.
  • For a creamy variation, spread a thin layer of cream cheese over the crust before adding the strawberries.
