Fresh green bean salad is a crisp and vibrant dish with tender green beans tossed in a light, zesty dressing, perfect for a refreshing side.

Ingredients

  • 1 lb fresh green beans (trimmed)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1 clove garlic (minced)
  • 1/4 cup red onion (thinly sliced, optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh herbs (parsley, basil, or dill)
  • 2 tablespoons toasted almonds or walnuts (optional)

Instructions

  1. Bring a pot of salted water to a boil.
  2. Add green beans and cook for 3–5 minutes until tender-crisp.
  3. Drain and transfer immediately to a bowl of ice water to stop cooking.
  4. Drain again and pat dry.
  5. In a bowl, whisk together olive oil, lemon juice or vinegar, garlic, salt, and black pepper.
  6. Add green beans and toss to coat evenly.
  7. Mix in red onion and fresh herbs.
  8. Top with toasted nuts if using.
  9. Serve immediately or chill slightly before serving.

Notes

  • Add cherry tomatoes or feta for extra flavor.
  • Include olives for a Mediterranean twist.
  • Add cooked quinoa for a more filling dish.
  • Store in the refrigerator for up to 2 days.
  • Add nuts just before serving to keep them crunchy.
