Ingredients

  • 1 pound roast beef, thinly sliced
  • 4 French rolls or hoagie rolls
  • 3 cups beef broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon fresh thyme (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 4 slices provolone or Swiss cheese (optional)

Instructions

  1. Melt butter in a saucepan over medium heat and sauté the sliced onion until soft and lightly caramelized.
  2. Add minced garlic and cook for about 1 minute until fragrant.
  3. Pour in beef broth, Worcestershire sauce, and soy sauce. Add thyme if using.
  4. Bring to a simmer and cook for 10–15 minutes to develop flavor. Season with salt and pepper.
  5. Place sliced roast beef into the warm broth briefly to heat through.
  6. Split and lightly toast the rolls if desired.
  7. Pile the warm beef onto the rolls and top with onions and optional cheese.
  8. Serve immediately with small bowls of hot au jus for dipping.
