French Almond Croissants

Buttery croissants filled with rich almond cream, topped with sliced almonds, and baked until golden and crisp. These French-inspired pastries are indulgent, nutty, and perfect for breakfast or dessert.

Ingredients

  • croissants (preferably day-old)
  • unsalted butter, softened
  • granulated sugar
  • eggs
  • almond flour
  • all-purpose flour
  • vanilla extract
  • almond extract
  • milk
  • sliced almonds
  • powdered sugar

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Slice croissants in half horizontally without cutting all the way through.
  3. Cream butter and sugar until smooth, then add eggs one at a time, mixing well.
  4. Stir in almond flour, all-purpose flour, vanilla extract, and almond extract to form almond cream.
  5. Lightly brush the inside of croissants with milk.
  6. Spread almond cream inside each croissant and close gently.
  7. Spread more almond cream on top and sprinkle with sliced almonds.
  8. Place on baking sheet and bake for 15–18 minutes until golden and crisp.
  9. Cool slightly and dust with powdered sugar before serving.

Notes

  • Day-old croissants absorb the filling best.
  • Add chocolate or fruit jam for variation.
  • Do not overfill to prevent sogginess.
  • Reheat in the oven to maintain crispness.
  • Store at room temperature for up to 2 days or refrigerate up to 4 days.
