Ingredients
2 cups old-fashioned rolled oats
2 apples, peeled and diced
2 eggs
1 cup milk
1/4 cup maple syrup or honey
1/2 cup unsweetened applesauce
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt

Instructions
Preheat the oven to 350°F and lightly grease a muffin tin or line with silicone muffin cups.
Peel and dice the apples into small pieces.
In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the eggs, milk, maple syrup, applesauce, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until fully combined.
Fold in the diced apples and any optional add-ins.
Divide the mixture evenly among the muffin cups, filling each nearly to the top.
Bake for 25–30 minutes, or until the oatmeal cups are golden and set in the center.
Allow the oatmeal cups to cool for several minutes before removing from the pan.
