Freezer Breakfast Sandwiches combine fluffy baked eggs, melted cheese, savory breakfast meat, and English muffins for an easy make-ahead breakfast. Prepare a batch, freeze individually, and reheat whenever you need a quick, satisfying meal.

Ingredients

  • 6 English muffins
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices cheddar cheese
  • 6 breakfast sausage patties, cooked bacon portions, or slices of ham
  • Butter or cooking spray, for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish or sheet pan with butter or cooking spray.
  2. Whisk together the eggs, milk, salt, and black pepper until thoroughly combined.
  3. Pour the egg mixture into the prepared baking dish and bake for 15–20 minutes, or until completely set.
  4. Allow the baked eggs to cool slightly, then cut them into 6 portions sized to fit the English muffins.
  5. Make sure the sausage, bacon, or ham is fully cooked before assembling the sandwiches.
  6. Split the English muffins. Place one portion of egg on each bottom half, followed by the breakfast meat and a slice of cheddar cheese. Add the remaining muffin halves on top.
  7. Allow all sandwich components to cool completely before wrapping to minimize excess moisture during freezing.
  8. Wrap each sandwich tightly in parchment paper or foil, then place the wrapped sandwiches in a freezer-safe bag or airtight container. Label with the date and freeze.
  9. To reheat from frozen, remove any foil, loosely wrap the sandwich in a paper towel, and microwave in short intervals, turning partway through, until thoroughly heated and the cheese has melted.
  10. For a crispier English muffin, finish the reheated sandwich in a toaster oven or air fryer for a few minutes. When reheating previously cooked food, heat the center to 165°F (74°C).

Notes

  • Cool all ingredients completely before assembling and freezing to help prevent soggy sandwiches and excess ice crystals.
  • English muffins freeze particularly well, but bagels, biscuits, croissants, or sturdy sandwich rolls can also be used.
  • For a vegetarian version, omit the meat and add cooked spinach, mushrooms, bell peppers, or onions.
