Fondant Melting Potatoes are crispy on the outside and soft, buttery, and tender inside. Slowly roasted in broth with garlic and thyme, this elegant potato side dish delivers rich flavor and a melt-in-your-mouth texture.

Ingredients

  • 4 large russet potatoes
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • 1 cup chicken broth or vegetable broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley (optional garnish)
  • Parmesan cheese (optional garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel the potatoes and cut them into thick round cylinders about 2 inches tall.
  3. Pat the potatoes dry with paper towels and season both sides with salt and black pepper.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  5. Place the potatoes flat-side down and sear for 5 to 6 minutes until deeply golden.
  6. Flip the potatoes carefully and add the butter, garlic cloves, and thyme to the pan.
  7. Cook for another 3 to 4 minutes while spooning the melted butter over the potatoes.
  8. Pour the broth carefully into the skillet.
  9. Transfer the skillet to the oven and roast for 30 to 35 minutes, occasionally spooning the broth over the potatoes, until tender inside and golden on top.
  10. Remove from the oven and let the potatoes rest for a few minutes before serving.
  11. Garnish with parsley or Parmesan cheese if desired.
