A vibrant and flavorful chicken salad packed with fresh vegetables, beans, and a zesty creamy dressing. This Tex-Mex inspired dish is refreshing, satisfying, and perfect for any occasion.

Ingredients

  • Cooked chicken, shredded or diced
  • Corn (fresh, canned, or frozen)
  • Black beans, drained and rinsed
  • Cherry tomatoes, halved
  • Red bell pepper, diced
  • Red onion, finely chopped
  • Cilantro, chopped
  • Avocado, diced (optional)
  • Mayonnaise or Greek yogurt
  • Lime juice
  • Taco seasoning
  • Garlic powder
  • Salt
  • Black pepper

Instructions

  1. In a large bowl, combine chicken, corn, black beans, cherry tomatoes, red bell pepper, red onion, and cilantro.
  2. In a separate bowl, whisk together mayonnaise or Greek yogurt, lime juice, taco seasoning, garlic powder, salt, and black pepper.
  3. Pour dressing over the chicken mixture and toss until evenly coated.
  4. Gently fold in avocado if using.
  5. Taste and adjust seasoning as needed.
  6. Chill for 20–30 minutes before serving.
  7. Serve on its own, in wraps, over greens, or with chips.

Notes

  • Use rotisserie chicken for convenience.
  • Add shredded cheese for extra richness.
