Boneless, skinless chicken breasts
Fresh spinach, chopped
Feta cheese, crumbled
Cream cheese (optional)
Garlic, minced
Olive oil
Dried oregano
Dried thyme
Paprika
Salt
Black pepper
Fresh parsley, chopped (for garnish)
Toothpicks or kitchen twine (optional)
Instructions
Preheat the oven to 375°F (190°C).
Using a sharp knife, cut a pocket into the side of each chicken breast without slicing all the way through.
In a bowl, combine the chopped spinach, feta cheese, garlic, and cream cheese if using.
Stuff each chicken breast with the spinach and feta mixture.
Secure the openings with toothpicks if needed.
Brush the chicken with olive oil and season with oregano, thyme, paprika, salt, and black pepper.
Heat an oven-safe skillet over medium-high heat and sear the chicken for 2–3 minutes per side until lightly golden.
Transfer the skillet to the oven, or place the chicken in a baking dish.
Bake for 18–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5 minutes, garnish with fresh parsley, and serve warm.

Frozen spinach may be used if thawed and thoroughly drained.
Add sun-dried tomatoes, olives, mushrooms, or extra cheese for delicious variations.
Avoid overfilling the chicken and secure with toothpicks to prevent the filling from leaking.
Prepare and stuff the chicken up to 24 hours in advance, then refrigerate until ready to cook.
