Ingredients

  • 4 medium zucchini (about 1 1/2 lb / 680 g), grated
  • 1 tsp salt, for draining the zucchini
  • 2 large eggs
  • 1/2 cup (60 g) all-purpose flour
  • 1/2 cup (50 g) freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 3 green onions, thinly sliced
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 tsp paprika, optional
  • 1/2 tsp baking powder, optional, for a lighter texture
  • 3 to 4 tbsp (45–60 ml) olive oil or vegetable oil, for frying
  • Fresh lemon wedges, for serving (optional)

Instructions

  1. Wash the zucchini and trim off the ends. Grate using the large holes of a box grater.
  2. Place the grated zucchini in a large bowl and sprinkle with 1 teaspoon of salt. Toss and let sit for 10 minutes to draw out excess moisture.
  3. Transfer the zucchini to a clean kitchen towel or cheesecloth and squeeze firmly over the sink to remove as much liquid as possible. This step is essential for crispy fritters.
  4. In a large bowl, whisk the eggs. Add the flour, Parmesan cheese, minced garlic, green onions, parsley, black pepper, onion powder, paprika, and baking powder if using. Stir until combined.
  5. Add the squeezed zucchini to the mixture and mix thoroughly. The mixture should hold together when scooped. If it seems too wet, add another tablespoon of flour.
  6. Heat 2 tablespoons of oil in a large nonstick skillet over medium heat.
  7. Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter. Flatten gently with the back of a spoon to form small patties.
  8. Cook for 3 to 4 minutes on each side, until golden brown and crisp. Adjust the heat as needed to prevent burning while allowing the centers to cook through.
  9. Transfer the cooked fritters to a paper towel-lined plate or wire rack. Add a little more oil to the skillet between batches as needed.
  10. Serve immediately while warm and crispy, with lemon wedges and your favorite dipping sauce.

Notes

  • Squeeze out as much liquid as possible from the zucchini. Excess moisture is the most common reason fritters turn soggy or fall apart.
  • For extra crispiness, avoid overcrowding the skillet and allow the oil to heat before adding each batch.
  • Do not add too much flour at once. Start with the recommended amount and add a little more only if the mixture is too wet to hold together.
  • For a delicious dipping sauce, combine 1/2 cup Greek yogurt, 1 tablespoon lemon juice, 1 small minced garlic clove, and 1 tablespoon chopped fresh dill.
  • For a gluten-free version, substitute a suitable gluten-free all-purpose flour blend.
  • You can replace Parmesan with crumbled feta for a tangier flavor.
  • Add fresh dill, basil, or mint for extra freshness, or a pinch of chili flakes for a little heat.
  • To bake instead of fry, arrange the patties on a parchment-lined baking sheet, brush lightly with oil, and bake at 425°F (220°C) for about 20 to 25 minutes, flipping halfway through. They may be less crispy than pan-fried fritters.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet or in a 375°F (190°C) oven until warmed through and crisp. Microwaving can make the fritters soft.
  • Freeze cooked, cooled fritters in a single layer before transferring them to a freezer-safe container for up to 2 months. Reheat from frozen in the oven until hot and crisp.
