Espresso rocky road is a rich no-bake chocolate treat packed with fluffy marshmallows, crunchy roasted nuts, cookies, and bold coffee flavor. A shot of espresso deepens the chocolate flavor, creating an easy make-ahead dessert with plenty of texture.

Ingredients

  • Dark or semisweet chocolate
  • Unsalted butter
  • Fresh espresso
  • Mini marshmallows
  • Roasted almonds, peanuts, or hazelnuts
  • Chocolate cookies or biscuits, roughly broken
  • Espresso powder, optional
  • Flaky sea salt, optional

Instructions

  1. Line a square baking pan with parchment paper, leaving enough overhang to lift out the rocky road after chilling.
  2. Roughly chop the chocolate and place it in a heatproof bowl with the unsalted butter.
  3. Gently melt the chocolate and butter together, stirring until completely smooth.
  4. Stir in the fresh espresso. Add optional espresso powder for a stronger coffee flavor.
  5. Allow the chocolate mixture to cool slightly so it will not immediately melt the marshmallows.
  6. Add the mini marshmallows, roasted nuts, and broken chocolate cookies or biscuits. Gently fold until all the additions are evenly coated with chocolate.
  7. Transfer the mixture to the prepared pan and spread it into an even layer.
  8. Sprinkle with optional flaky sea salt for a sweet-and-salty finish.
  9. Refrigerate for about 2 hours, or until completely firm.
  10. Lift the rocky road from the pan using the parchment paper and cut it into approximately 16 squares.

Notes

  • Use good-quality dark or semisweet chocolate for a rich flavor that balances the sweet marshmallows.
  • Do not use excessive liquid espresso because too much liquid can prevent the chocolate mixture from setting firmly.
  • Strongly brewed coffee or instant espresso powder dissolved in a small amount of hot water can replace fresh espresso.
  • Add extra espresso powder gradually if a stronger coffee flavor is desired.
  • Almonds, hazelnuts, pistachios, or peanuts can be used individually or combined.
  • For a sweeter variation, replace some of the dark chocolate with milk chocolate.
  • Crushed pretzels can replace the cookies for a salty crunch, while caramel pieces or a white chocolate drizzle can add extra richness.
  • For a nut-free variation, omit the nuts and add extra cookies, marshmallows, pretzels, or another suitable crunchy ingredient.
  • Store in an airtight container in the refrigerator for about 1 week, separating layers with parchment paper.
  • Freeze in an airtight freezer-safe container for up to 2 months. No reheating is needed; allow chilled pieces to sit at room temperature for 5–10 minutes for a slightly softer texture.
