Ingredients

  • 6 eggs
  • 3 cups diced potatoes

  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil or melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach (optional)
  • 1/2 cup sliced mushrooms (optional)
  • 2 tablespoons sliced green onions (optional)
  • 1 jalapeño, sliced (optional)

Instructions

  1. Preheat a grill, campfire grate, or oven to 400°F.
  2. Cut four large sheets of heavy-duty foil and lightly grease each one.
  3. Place diced potatoes in the center of each foil sheet and drizzle with olive oil or melted butter.
  4. Top with cooked bacon or sausage, bell peppers, onion, and any optional vegetables.
  5. Carefully crack eggs over the mixture in each packet.
  6. Season with salt and black pepper.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Fold the foil tightly to seal each packet completely.
  9. Cook for 25 to 30 minutes, or until the potatoes are tender and the eggs are fully cooked.
