Ingredients

  • 6 eggs
  • 3 cups cooked breakfast potatoes or hash browns

  • 1 tbsp butter or cooking spray
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat a grill, campfire grate, or oven to medium heat, about 375°F.
  2. Cut large sheets of heavy-duty aluminum foil and lightly grease the centers with butter or cooking spray.
  3. Divide the cooked potatoes evenly among the foil sheets.
  4. Top with cooked bacon or sausage, diced bell peppers, onions, and any optional vegetables.
  5. Crack the eggs into a bowl, whisk lightly with salt and black pepper, then pour evenly over each packet.
  6. Sprinkle shredded cheddar cheese on top.
  7. Fold the foil tightly around the ingredients to create sealed packets.
  8. Place the packets on the grill, campfire grate, or baking sheet in the oven.
  9. Cook for 15–20 minutes, or until the eggs are fully set and cooked through.
  10. Carefully open the packets, garnish as desired, and serve warm.
