  • 1 pound cooked ground beef or seasoned taco meat
  • 6 slices cooked bacon, crumbled
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 jalapeño, sliced
  • 1 cup diced tomatoes
  • 2 green onions, sliced
  • 1/2 cup sour cream
  • 1/2 cup guacamole or 1 sliced avocado
  • 1/2 cup salsa
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon taco seasoning (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bake the frozen tater tots according to the package directions until golden brown and crispy.
  3. Transfer the cooked tater tots to an oven-safe serving dish or leave them on the baking sheet.
  4. Sprinkle the cheddar and Monterey Jack cheeses evenly over the hot tater tots.
  5. Top with the cooked ground beef, crumbled bacon, black beans, corn, and jalapeño slices.
  6. Return the dish to the oven for 5 to 7 minutes until the cheese is fully melted.
  7. Top with diced tomatoes, green onions, cilantro, sour cream, salsa, and guacamole or sliced avocado.
  8. Serve immediately while the tater tots are hot and crispy.

Notes

  • For a vegetarian version, replace the meat with extra black beans and sautéed vegetables.
  • Use pepper Jack cheese and extra jalapeños for additional heat.
  • Add queso sauce or pulled pork for a delicious variation.
  • Keep fresh toppings separate until serving for the best texture.
  • Reheat leftovers in the oven or air fryer to restore crispiness.
