Easy Mexican Fried Rice is a quick and flavorful one-pan dish made with seasoned rice, colorful vegetables, black beans, and salsa for a delicious Mexican-inspired meal. It’s perfect as a hearty side dish or an easy weeknight main course.

Ingredients

  • Cooked long-grain rice, chilled
  • Olive oil
  • Yellow onion, diced
  • Garlic, minced
  • Red bell pepper, diced
  • Green bell pepper, diced
  • Corn kernels
  • Black beans, drained and rinsed
  • Salsa
  • Tomato paste
  • Chili powder
  • Ground cumin
  • Smoked paprika
  • Garlic powder
  • Salt
  • Black pepper
  • Fresh cilantro, chopped
  • Lime wedges, for serving
  • Shredded cheddar or Mexican cheese blend (optional)
  • Sliced jalapeños (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and bell peppers and cook for 4–5 minutes until softened.
  3. Stir in the garlic and cook for about 30 seconds until fragrant.
  4. Add the corn and black beans and cook for another 2 minutes.
  5. Stir in the tomato paste, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
  6. Add the chilled cooked rice and toss until evenly coated with the seasonings.
  7. Stir in the salsa and cook for 3–5 minutes until the rice is heated through and flavorful.
  8. Taste and adjust the seasoning as needed.
  9. Remove from the heat and stir in the chopped cilantro.
  10. Serve with lime wedges and garnish with shredded cheese or sliced jalapeños if desired.

Notes

  • Day-old chilled rice produces the best fried rice texture.
  • Add cooked chicken, beef, shrimp, or tofu for extra protein.
  • Customize with vegetables such as zucchini, mushrooms, spinach, or tomatoes.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Reheat with a splash of water if the rice becomes dry.
