Ingredients

  • 2 cups vanilla ice cream, slightly softened
  • 1/2 cup fresh strawberries, diced
  • 4 shortbread cookies or vanilla sandwich cookies, crushed
  • 2 tablespoons strawberry syrup
  • Whipped cream, optional
  • Extra crushed cookies, for garnish

Instructions

  1. Place the softened vanilla ice cream in a mixing bowl.
  2. Gently fold in the diced strawberries and most of the crushed cookies.
