Fresh homemade strawberry butter is creamy, fluffy, and packed with bright berry flavor. It is a delicious spread for biscuits, toast, pancakes, waffles, muffins, and fresh bread.

Ingredients

  • 1 cup unsalted butter, softened
  • Fresh strawberries, washed, hulled, dried, and finely chopped
  • Powdered sugar
  • Honey
  • Pinch of salt
  • Vanilla extract, optional

Instructions

  1. Wash the strawberries, remove the stems, and pat them thoroughly dry. Finely chop or mash the berries depending on the desired texture.
  2. Place the softened butter in a mixing bowl and beat with an electric mixer until light and creamy.
  3. Add the powdered sugar, honey, salt, and optional vanilla extract. Beat until smooth and fluffy.
  4. Gently mix in the prepared strawberries, avoiding overmixing to maintain a pleasant texture.
  5. Taste and adjust the sweetness as needed, using less added sweetener when the strawberries are especially ripe and sweet.
  6. Serve immediately while soft and spreadable, or transfer to a covered container and refrigerate until ready to use.

Notes

  • Use ripe, flavorful strawberries for the best natural flavor and color.
  • Make sure the strawberries are thoroughly dry to prevent watery or separated butter.
  • For strawberry honey butter, increase the honey slightly and reduce the powdered sugar.
  • For strawberry lemon butter, add a little finely grated lemon zest.
  • For a smoother texture, puree the strawberries and add the puree gradually to avoid excess moisture.
  • For a chunkier texture, finely dice the strawberries and gently fold them into the whipped butter.
  • Salted butter can replace unsalted butter; omit the additional pinch of salt.
  • Store in an airtight container in the refrigerator for 3 to 5 days.
  • Let refrigerated butter soften briefly at room temperature before serving. Avoid microwaving because it may melt and separate.
  • For longer storage, freeze in a freezer-safe container or tightly wrapped portions. Thaw in the refrigerator and stir or whip again before serving if needed.
