Easy coconut black beans are rich, creamy, and flavorful, combining hearty beans with coconut milk for a comforting and satisfying dish.

Ingredients

  • 2 cups black beans (canned or cooked)
  • 1 cup coconut milk
  • 1/2 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro (optional)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion and cook until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Add cumin and smoked paprika, stirring briefly.
  5. Add black beans (with liquid if canned) and mix well.
  6. Pour in coconut milk and stir to combine.
  7. Bring to a gentle simmer and cook for 10–15 minutes until slightly thickened.
  8. Season with salt, black pepper, and lime juice.
  9. Garnish with cilantro if desired and serve.
