Ingredients

  • 1 lb ground beef or ground chicken
  • 1 small onion, chopped
  • 2 celery stalks, sliced
  • 1 (10.5 oz) can cream of mushroom soup
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • black pepper
  • 2 cups mixed vegetables (peas, carrots, etc.)
  • 2 cups cooked rice or cooked noodles
  • 1 1/2 cups crispy chow mein noodles

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, cook ground beef or chicken with chopped onion and celery until browned and tender. Drain excess grease.
  3. Stir in cream of mushroom soup, soy sauce, garlic powder, and black pepper until well combined.
  4. Add mixed vegetables and cooked rice or noodles, stirring until fully incorporated.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Top with crispy chow mein noodles.
  7. Bake for 25 to 30 minutes until heated through and topping is golden and crunchy.
  8. Remove from oven, let cool slightly, and serve.
