Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • Fresh parsley for garnish
  • Lemon slices for serving (optional)

Instructions

  1. Slice the chicken breasts horizontally to create thinner cutlets.
  2. Season both sides of the chicken with salt and black pepper.
  3. Lightly dredge the chicken in flour, shaking off any excess.
  4. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  5. Cook the chicken for 3 to 4 minutes per side until golden brown and cooked through.
  6. Remove the chicken from the skillet and set aside.
  7. In the same skillet, add minced garlic and cook briefly until fragrant.
  8. Pour in chicken broth and lemon juice, scraping up any browned bits from the pan.
  9. Stir in capers and simmer for a few minutes until the sauce slightly reduces.
  10. Add the remaining butter and stir until melted into the sauce.
  11. Return the chicken to the skillet and spoon the sauce over the top.
  12. Garnish with fresh parsley and lemon slices before serving.
