Easy Burrito is a customizable, satisfying, and hearty meal wrapped in a tortilla, filled with rice, beans, cheese, and your choice of protein. Perfect for a busy weeknight or meal prep, this dish offers endless options for fillings and toppings.

Ingredients

  1. 4 large flour tortillas
    1 cup cooked rice (white, brown, or cilantro-lime rice)
    1 can (15 oz) black beans or pinto beans, drained and rinsed
    1 cup cooked chicken, beef, or tofu (optional for protein)
    1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
    1/2 cup sour cream or Greek yogurt
    1/4 cup salsa or pico de gallo
    1/4 cup guacamole or sliced avocado
    1/2 cup lettuce, shredded
    Salt and pepper to taste
    Optional toppings: Jalapeños, cilantro, hot sauce, or pickled onions

Instructions

Prepare the Filling: Cook your rice (if not already cooked). If using a protein, cook it as desired and season with spices like cumin, chili powder, or taco seasoning.

  1. Warm the Tortillas: Warm tortillas in a dry skillet over medium heat for 10-15 seconds on each side to make them pliable.
  2. Assemble the Burritos: Lay a warm tortilla flat, then layer the rice, beans, protein, cheese, sour cream, salsa, guacamole, and lettuce in the center of the tortilla. Don’t overfill.
  3. Fold the Burrito: Fold in the sides and roll the tortilla tightly from the bottom up.
  4. Serve: Serve immediately or toast the burrito in a skillet for 2-3 minutes on each side for a crispy finish. Cut in half and serve with extra salsa or hot sauce.
