This Easy Bruschetta Chicken features juicy, seasoned chicken breasts topped with a fresh tomato bruschetta mixture, fragrant basil, and a drizzle of balsamic glaze. It’s a light, flavorful meal that’s perfect for busy weeknights or elegant enough for entertaining.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons balsamic glaze
  • 1 cup mozzarella cheese, shredded or sliced (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Season the chicken breasts with salt, black pepper, paprika, and Italian seasoning.
  2. Heat the olive oil in a large skillet or grill pan over medium-high heat.
  3. Cook the chicken for 5 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  4. Meanwhile, combine the diced tomatoes, garlic, chopped basil, a drizzle of olive oil, balsamic vinegar, salt, and black pepper in a bowl.
  5. If using mozzarella, place it on the cooked chicken and allow it to melt for about 1 minute.
  6. Spoon the fresh bruschetta mixture generously over each chicken breast.
  7. Drizzle with balsamic glaze and sprinkle with grated Parmesan cheese if desired.
  8. Serve immediately while warm.
