These Easy Baked Pumpkin Donuts are soft, fluffy, and filled with warm fall spices and pumpkin flavor. Baked instead of fried, they make a delicious breakfast, brunch treat, or cozy afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/3 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional topping: melted butter, granulated sugar, ground cinnamon, or powdered sugar glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
  2. Whisk together the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt in a large bowl.
  3. In a separate bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, eggs, milk, oil, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined.
  5. Transfer the batter to a piping bag or a zip-top bag with one corner snipped off.
  6. Pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.
  7. Bake for about 12 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.
  8. Cool the donuts in the pan for a few minutes before transferring them to a wire rack.
  9. Brush with melted butter and coat with cinnamon sugar, or drizzle with powdered sugar glaze before serving if desired.
