Elegant Duchess Potatoes are made with creamy mashed potatoes piped into decorative swirls and baked until golden brown. Crispy on the outside and soft and buttery inside, they are a classic French side dish perfect for holidays and special occasions.

Ingredients

  • Russet potatoes or Yukon Gold potatoes
  • Unsalted butter
  • Heavy cream or whole milk
  • Egg yolks
  • Grated Parmesan cheese (optional)
  • Salt
  • Black pepper
  • Garlic powder (optional)
  • Ground nutmeg (optional)
  • Chopped fresh chives or parsley, for garnish
  • Melted butter or an egg wash, for brushing

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and cut the potatoes into evenly sized pieces, then boil until fork tender.
  3. Drain the potatoes well and allow excess moisture to evaporate.
  4. Mash the potatoes until completely smooth with no lumps.
  5. Stir in the butter, cream, egg yolks, Parmesan if using, salt, pepper, and any optional seasonings.
  6. Transfer the potato mixture to a piping bag fitted with a large star tip.
  7. Pipe decorative swirls onto the prepared baking sheet, leaving space between each one.
  8. Brush the tops lightly with melted butter or an egg wash.
  9. Bake for about 35 minutes, or until the edges are crisp and the tops are golden brown.
  10. Let cool for a few minutes before serving warm.

Notes

  • Yukon Gold and Russet potatoes both produce a smooth, fluffy texture.
  • Add cheddar, Gruyère, or extra Parmesan for a richer flavor.
  • Roasted garlic, thyme, rosemary, or chives add extra depth and freshness.
  • Mix in sweet potato or purple potatoes for a colorful variation.
  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze baked or unbaked Duchess Potatoes for up to 2 months.
  • Reheat in a 375°F (190°C) oven until heated through and crisp.
