Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup hot coffee or hot water
  • 1 cup pistachio paste
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Chopped pistachios for garnish (optional)
  • Gold sprinkles for garnish (optional)
  • Chocolate curls for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Mix until combined.
  4. Stir in the hot coffee or water until the batter is smooth.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool completely.
  8. For the filling, beat the cream cheese and powdered sugar until smooth.
  9. Add the pistachio paste and mix until creamy.
  10. In a separate bowl, whip the heavy cream until soft peaks form, then fold it into the pistachio mixture.
  11. Place one cake layer on a serving plate and spread the pistachio filling evenly on top.
  12. Add the second cake layer.
  13. For the ganache, heat the heavy cream until warm and pour over the chocolate chips. Let sit for 2 minutes, then stir until smooth.
  14. Pour the ganache over the cake, allowing it to drip slightly down the sides.
  15. Garnish with chopped pistachios, gold sprinkles, or chocolate curls if desired.
  16. Refrigerate for 30 minutes before slicing and serving.

Notes

  • Add rose water to the pistachio filling for a floral Middle Eastern-inspired flavor.
  • Use white chocolate ganache for a sweeter variation.
  • Store covered in the refrigerator for up to 5 days.
  • Allow slices to sit at room temperature for 15 minutes before serving for the best texture.
  • Freeze the cake without garnish for up to 2 months and thaw overnight before serving.
