Dorito Chicken Casserole combines tender chicken, a creamy Tex-Mex filling, melted cheese, and crunchy Nacho Cheese Doritos in an easy baked dinner. Using cooked or rotisserie chicken makes this comforting casserole especially quick to assemble.

Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 1 bag (9.25 ounces) Nacho Cheese Doritos, coarsely crushed
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 ounces) diced tomatoes with green chiles, drained
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 1/2 cups shredded Monterey Jack cheese, divided
  • 1 cup corn, drained if canned
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced green onions, optional
  • 2 tablespoons chopped fresh cilantro, optional
  • 1/2 cup diced fresh tomatoes, optional
  • 1/2 cup sour cream for serving, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
  2. Place the cooked chicken in a large mixing bowl.
  3. Add the cream of chicken soup, 1 cup sour cream, diced tomatoes with green chiles, corn, taco seasoning, garlic powder, and black pepper. Stir until the chicken is evenly coated.
  4. Add 1 cup cheddar cheese and 1 cup Monterey Jack cheese to the chicken mixture and stir until combined.
  5. Place the Doritos in a resealable bag and gently crush them into coarse pieces. Reserve about 1 cup of the crushed chips for the final topping.
  6. Spread half of the remaining crushed Doritos evenly across the bottom of the prepared baking dish.
  7. Spoon the creamy chicken mixture over the chips and spread it into an even layer.
  8. Top with the remaining crushed Doritos, followed by the remaining 1/2 cup cheddar and 1/2 cup Monterey Jack cheese.
  9. Bake uncovered for 25 to 30 minutes, until the filling is hot and bubbling and the cheese is completely melted.
  10. During the final 5 minutes of baking, scatter the reserved crushed Doritos over the casserole for an extra-crispy topping.
  11. Let the casserole rest for 5 to 10 minutes before serving.
  12. Top individual portions with green onions, cilantro, diced tomatoes, or additional sour cream if desired.

Notes

  • Rotisserie or leftover cooked chicken works well and reduces preparation time.
  • Crush the Doritos coarsely rather than into fine crumbs for more texture and crunch.
  • For a spicier casserole, use Spicy Nacho Doritos or add jalapeños, extra green chiles, or hot sauce.
  • Cool Ranch Doritos can replace Nacho Cheese Doritos for a different flavor.
  • Drained black beans, additional corn, or sautéed bell peppers can be mixed into the filling for a heartier casserole.
  • For make-ahead preparation, refrigerate the chicken filling separately and add the Doritos just before baking.
  • Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
  • Add freshly crushed Doritos after reheating leftovers to restore some of the original crunch.
