Dorito Casserole is a cheesy, hearty comfort food made with seasoned ground beef, a creamy Tex-Mex filling, melted cheese, and crunchy Doritos baked until hot and bubbly. It’s an easy family-friendly dinner that’s perfect for weeknights, potlucks, or game day gatherings.

Ingredients

  • Nacho Cheese Doritos, lightly crushed
  • Ground beef
  • Yellow onion, diced
  • Garlic, minced
  • Taco seasoning
  • Diced tomatoes with green chilies
  • Cream of chicken soup
  • Sour cream
  • Shredded cheddar cheese
  • Shredded Monterey Jack cheese
  • Black beans, drained and rinsed (optional)
  • Corn kernels (optional)
  • Olive oil
  • Salt
  • Black pepper
  • Chopped green onions, for garnish
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion and cook for 4–5 minutes until softened.
  4. Stir in the garlic and cook for about 30 seconds until fragrant.
  5. Add the ground beef and cook until browned, breaking it into crumbles. Drain excess grease.
  6. Stir in the taco seasoning and diced tomatoes with green chilies.
  7. Mix in the cream of chicken soup and sour cream until smooth and creamy.
  8. Add the black beans and corn if using.
  9. Spread a layer of lightly crushed Doritos in the prepared baking dish.
  10. Spoon half of the beef mixture over the chips and sprinkle with half of the cheddar and Monterey Jack cheeses.
  11. Repeat the layers, finishing with the remaining cheese.
  12. Bake for 25–30 minutes until hot and bubbly.
  13. Let the casserole rest for 5–10 minutes before serving.
  14. Garnish with green onions and fresh cilantro if desired.

Notes

  • Use fresh Doritos when assembling for the best crunch.
  • Ground turkey, chicken, or shredded rotisserie chicken can replace the ground beef.
  • Add jalapeños or hot taco seasoning for extra heat.
  • Top with sour cream, avocado, salsa, or shredded lettuce before serving.
  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze only the filling for up to 3 months and assemble with fresh Doritos before baking.
