Dole Whip Mock Mimosas combine creamy frozen pineapple, coconut milk, fresh lime, and sparkling white grape juice for a frosty tropical drink. This alcohol-free beverage is refreshing, festive, and perfect for brunches, celebrations, and warm-weather gatherings.

Ingredients

  • Frozen pineapple chunks
  • Pineapple juice
  • Coconut milk
  • Fresh lime juice
  • Honey or maple syrup, optional
  • Sparkling white grape juice
  • Ice cubes, optional
  • Fresh pineapple wedges, for garnish
  • Orange slices, for garnish
  • Maraschino cherries, optional, for garnish
  • Fresh mint leaves, optional, for garnish

Instructions

  1. Place the frozen pineapple chunks in a high-speed blender.
  2. Add the pineapple juice, coconut milk, and fresh lime juice.
  3. Add honey or maple syrup if additional sweetness is desired.
  4. Blend until thick, smooth, and creamy. Add a few ice cubes for an even frostier consistency if desired.
  5. Spoon or pour the pineapple mixture into serving glasses, filling each about halfway.
  6. Slowly pour sparkling white grape juice over the pineapple mixture.
  7. Stir very gently to create a creamy, bubbly consistency while preserving the carbonation.
  8. Garnish each glass with a pineapple wedge, orange slice, optional cherry, or fresh mint.
  9. Serve immediately while cold and frothy.

Notes

  • Frozen pineapple produces the thickest and frostiest texture. Fresh pineapple can be cut into chunks and frozen before blending.
  • Use more frozen pineapple and less juice for a thicker consistency.
  • Coconut water can replace coconut milk for a lighter drink, while oat or almond milk can provide a creamy alternative.
  • Sparkling apple juice can replace sparkling white grape juice.
  • Frozen mango or strawberries can be blended with the pineapple for additional fruit flavor.
  • For a less sweet drink, use unsweetened pineapple juice and omit the optional sweetener.
  • The pineapple mixture can be prepared several hours ahead and frozen in an airtight container. Soften slightly and blend again before serving.
  • Add the sparkling juice immediately before serving to preserve its carbonation.
  • These mock mimosas are best enjoyed immediately and do not require reheating.
