This Dill Pickle Pasta Salad is a creamy, tangy side dish loaded with tender rotini, crunchy dill pickles, cheddar cheese, and a flavorful dill-infused dressing. It’s a refreshing make-ahead recipe that’s perfect for barbecues, potlucks, picnics, and family meals.

Ingredients

  • 12 ounces rotini pasta
  • 1 1/2 cups dill pickles, diced
  • 8 ounces cheddar cheese, cubed
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh dill, chopped
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup dill pickle juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the rotini pasta according to the package directions until al dente.
  2. Drain the pasta, rinse under cold water to stop the cooking process, and drain well.
  3. In a large bowl, whisk together the mayonnaise, sour cream, dill pickle juice, Dijon mustard, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Add the cooled pasta, diced dill pickles, cubed cheddar cheese, red onion, and fresh dill to the bowl.
  5. Gently toss until all the ingredients are evenly coated with the dressing.
  6. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  7. Stir before serving and add an extra splash of pickle juice if desired for more tang.

Notes

  • Add cooked bacon, diced ham, or shredded chicken to make it a heartier dish.
  • Substitute Monterey Jack or Colby cheese for the cheddar if preferred.
  • Mix in chopped celery or sliced green onions for extra crunch and flavor.
  • Store in an airtight container in the refrigerator for up to 4 days. Refresh with a spoonful of mayonnaise or pickle juice before serving if needed.
  • Freezing is not recommended, as the pasta and dressing may lose their texture.
