Decadent Spinach Soufflé is a light, airy, and elegant French-inspired dish made with tender spinach, rich cheeses, and fluffy whipped egg whites. Perfect for brunch, lunch, dinner, or special occasions, it delivers impressive flavor and texture with simple ingredients.

Ingredients

  • Fresh spinach, chopped
  • Butter
  • All-purpose flour
  • Whole milk
  • Eggs, separated
  • Gruyère cheese, grated
  • Parmesan cheese, grated
  • Onion, finely chopped
  • Garlic, minced
  • Nutmeg
  • Salt
  • Black pepper
  • Cream of tartar (optional)
  • Butter and grated Parmesan, for preparing the baking dish

Instructions

  1. Preheat the oven to 375°F (190°C). Butter a soufflé dish or deep baking dish and coat it lightly with grated Parmesan cheese.
  2. Heat butter in a skillet over medium heat and sauté the onion until softened.
  3. Add the garlic and cook for about 30 seconds, then stir in the spinach until wilted. Remove from the heat and let cool slightly.
  4. In a saucepan, melt butter over medium heat and whisk in the flour to form a roux. Cook for 1–2 minutes.
  5. Gradually whisk in the milk until smooth and thickened.
  6. Remove from the heat and stir in the Gruyère, Parmesan, nutmeg, salt, and black pepper.
  7. Beat the egg yolks into the cheese sauce one at a time, then stir in the spinach mixture.
  8. In a clean bowl, beat the egg whites with the cream of tartar until stiff peaks form.
  9. Fold one-third of the egg whites into the spinach mixture, then gently fold in the remaining egg whites until just combined.
  10. Spoon the mixture into the prepared dish and smooth the top.
  11. Bake for 30–35 minutes without opening the oven door until the soufflé is puffed and golden brown.
  12. Serve immediately for the best texture and rise.

Notes

  • Frozen spinach may be substituted if thawed and thoroughly drained.
  • Gruyère, Swiss, cheddar, or additional Parmesan all work well.
  • For individual servings, divide the mixture among ramekins and bake for 20–25 minutes.
  • Do not open the oven during baking to help maintain the soufflé’s rise.
  • Leftovers can be refrigerated for up to 2 days and gently reheated, though the soufflé will lose some height.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend suitable for sauces.
