Date Caramel is a naturally sweet and creamy sauce made from blended soft dates for a rich caramel-like flavor without refined sugar. This healthy and versatile spread is perfect for desserts, fruit, toast, smoothies, and oatmeal.

Ingredients

  • 1 1/2 cups soft Medjool dates, pitted
  • 1/2 cup warm water
  • 1/4 cup milk or plant-based milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: cinnamon
  • Optional: maple syrup
  • Optional: almond butter
  • Optional: coconut cream

Instructions

  1. Place the pitted dates in a bowl and cover with warm water if they are dry or firm.
  2. Soak for about 10 minutes to soften.
  3. Drain the dates and place them in a blender or food processor.
  4. Add the warm water, milk, vanilla extract, and salt.
  5. Blend until completely smooth and creamy.
  6. Scrape down the sides as needed during blending.
  7. Add more water or milk a little at a time if a thinner consistency is desired.
  8. Taste and adjust flavor if needed.
  9. Transfer the caramel to a jar or airtight container.
  10. Serve immediately or refrigerate until ready to use.

Notes

  • Use coconut milk or coconut cream for a richer caramel flavor.
  • Add cinnamon or espresso powder for flavored variations.
  • Almond butter can be blended in for extra creaminess and protein.
  • Stir before serving if separation occurs during storage.
  • Store in the refrigerator for up to 1 week or freeze for up to 2 months.
