A rich and creamy baked cheesecake with a buttery biscuit crust and a silky Medjool date caramel topping. The dates add naturally deep, toffee-like sweetness that pairs beautifully with the tangy cheesecake filling.

Ingredients

  • 2 cups crushed graham crackers or digestive biscuits
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 24 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups soft Medjool dates, pitted
  • 1/2 cup hot water
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Chopped dates, optional
  • Chopped pecans or walnuts, optional
  • Flaky sea salt, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
  2. Combine the crushed graham crackers or digestive biscuits with the melted butter, brown sugar, and salt. Press the mixture firmly and evenly into the bottom of the prepared pan.
  3. Bake the crust for 8 to 10 minutes. Remove it from the oven and let it cool slightly, then reduce the oven temperature to 325°F (165°C).
  4. Beat the softened cream cheese and granulated sugar until smooth and creamy, taking care not to overmix.
  5. Mix in the sour cream, vanilla extract, flour, and salt. Add the eggs one at a time, mixing on low speed just until each egg is incorporated.
  6. Pour the cheesecake filling over the prepared crust and smooth the top.
  7. Bake for 50 to 60 minutes, until the edges are set but the center still has a slight wobble.
  8. Turn off the oven, crack the oven door open, and leave the cheesecake inside for about 1 hour to cool gradually.
  9. Remove the cheesecake from the oven and cool to room temperature. Refrigerate for at least 6 hours or preferably overnight.
  10. For the date caramel, soak the pitted Medjool dates in the hot water for about 10 minutes.
  11. Blend the soaked dates and soaking water with the heavy cream, butter, vanilla extract, and sea salt until completely smooth and creamy.
  12. Spread the date caramel evenly over the thoroughly chilled cheesecake.
  13. Garnish with chopped dates, chopped pecans or walnuts, and flaky sea salt as desired. Slice and serve chilled or slightly softened at room temperature.

Notes

  • Use soft Medjool dates for the smoothest, most caramel-like topping. If the dates are firm or dry, soak them a little longer.
  • If the date caramel is too thick, blend in a small splash of warm water or cream until it reaches the desired consistency.
  • For a chocolate variation, add a layer of dark chocolate ganache beneath the date caramel.
  • For extra texture, add toasted pecans or walnuts to the topping or mix finely chopped nuts into the crust.
  • A pinch of cinnamon or cardamom can be added to the date caramel for extra warmth.
  • For individual cheesecakes, divide the crust and filling among lined muffin cups and begin checking for doneness after 18 to 22 minutes.
  • Store the cheesecake covered in the refrigerator for up to 4 to 5 days.
  • Individual slices can be securely wrapped and frozen for up to 2 months. Thaw overnight in the refrigerator before serving.
  • For the cleanest slices, chill the cheesecake overnight and use a sharp knife wiped clean between cuts.
