This Date and Goat Cheese Flatbread combines sweet Medjool dates, creamy goat cheese, fresh thyme, and honey on a crisp flatbread base. It makes an elegant appetizer, shareable snack, or light meal with minimal preparation.

Ingredients

  • 1 large prepared flatbread or naan, approximately 10 x 12 inches
  • 4 ounces goat cheese, softened or crumbled
  • 6 large Medjool dates, pitted and thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon flaky sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 cup baby arugula, optional
  • 1/4 cup chopped walnuts or pecans, optional
  • 1 tablespoon balsamic glaze, optional
  • 1/4 teaspoon red pepper flakes, optional

Instructions

  1. Preheat the oven to 425°F (220°C). Place a baking sheet or pizza stone in the oven while it preheats.
  2. Place one approximately 10 x 12-inch prepared flatbread or naan on a work surface and brush it evenly with 1 tablespoon olive oil.
  3. Spread or crumble 4 ounces goat cheese evenly over the flatbread, leaving about a 1/2-inch border around the edges.
  4. Scatter the sliced Medjool dates evenly over the goat cheese. Sprinkle with the optional chopped walnuts or pecans.
  5. Carefully transfer the assembled flatbread to the hot baking sheet or pizza stone.
  6. Bake for 8–12 minutes, until the edges are crisp and lightly golden and the goat cheese is warm and softened.
  7. Remove from the oven and sprinkle with fresh thyme, flaky sea salt, black pepper, and optional red pepper flakes.
  8. Drizzle evenly with honey and, if desired, balsamic glaze.
  9. Top with fresh arugula, if using.
  10. Slice into pieces and serve warm.

Notes

  • This recipe is designed for one large prepared flatbread or naan measuring approximately 10 x 12 inches. For smaller 8-inch naan breads, divide the toppings between two pieces.
  • Soft Medjool dates work particularly well because of their chewy texture and caramel-like sweetness.
  • For additional savory sweetness, add about 1/2 cup caramelized onions before baking.
  • Pistachios can be substituted for the walnuts or pecans.
  • Thinly sliced pear or apple can be added alongside the dates for a fruitier variation.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat at 350°F (175°C) in the oven or air fryer until warmed through and crisp.
