1 large bunch dandelion greens
1 large onion, thinly sliced
3 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice
Red pepper flakes (optional garnish)
Grated Parmesan cheese (optional garnish)
Toasted nuts (optional garnish)
Instructions
Wash the dandelion greens thoroughly and trim any tough stems.
Bring a large pot of salted water to a boil.
Blanch the dandelion greens for 3 to 4 minutes to reduce bitterness.
Drain and rinse the greens under cold water, then squeeze out excess moisture and roughly chop.
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the sliced onions and cook slowly, stirring often, until golden brown and crispy.
Transfer the onions to a plate lined with paper towels.
In the same skillet, add the remaining olive oil and minced garlic.
Cook for about 30 seconds until fragrant.
Add the chopped dandelion greens and sauté for 3 to 5 minutes.
Season with salt, black pepper, and lemon juice.
Transfer the greens to a serving dish and top with the crispy fried onions.
Serve warm.
Notes
Add cooked bacon for extra savory flavor.
Use shallots instead of onions for a milder taste.
Feta cheese adds a tangy finish to the dish.
Add chili flakes for extra heat.
Mix with spinach or kale for a milder green blend.
Store leftovers in the refrigerator for up to 3 days.
Keep fried onions separate when storing to maintain crispness.
