These Cucumber Sandwiches are light, refreshing, and filled with crisp cucumber slices and a creamy herb-infused spread on soft bread. Perfect for afternoon tea, brunch, picnics, or a quick snack, they’re simple to make and elegantly delicious.

Ingredients

  • 8 slices soft white bread or whole wheat bread
  • 1 large English cucumber, thinly sliced
  • 8 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh chives, finely chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Butter, softened (optional, for spreading on the bread)

Instructions

  1. Pat the cucumber slices dry with paper towels to remove excess moisture.
  2. In a bowl, combine the softened cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, salt, and black pepper until smooth.
  3. Spread a thin layer of butter on the bread if using to help prevent sogginess.
  4. Spread the cream cheese mixture evenly over each slice of bread.
  5. Arrange the cucumber slices in a single layer over half of the bread slices.
  6. Top with the remaining bread slices, cream cheese side down.
  7. Gently press the sandwiches together.
  8. Trim the crusts if desired for a traditional tea sandwich presentation.
  9. Cut each sandwich into halves, triangles, or finger sandwiches and serve immediately.

  • Use English cucumbers for the best texture and fewer seeds.
  • Add thinly sliced radishes, smoked salmon, or everything bagel seasoning for extra flavor.
