Cucumber Sandwiches are light, refreshing tea sandwiches made with crisp cucumber, a creamy herb spread, and soft bread. They require no cooking and are perfect for afternoon tea, brunches, showers, picnics, parties, and light lunches.

Ingredients

  • English cucumber
  • Soft white or whole-wheat sandwich bread
  • Cream cheese, softened
  • Mayonnaise or sour cream
  • Fresh dill
  • Fresh chives
  • Lemon juice
  • Garlic powder
  • Salt
  • Black pepper

Instructions

  1. Wash and dry the cucumber, then slice it into very thin rounds.
  2. Spread the cucumber slices over paper towels and gently pat them dry to remove excess moisture.
  3. Place the softened cream cheese in a bowl and add the mayonnaise or sour cream, chopped dill, chopped chives, lemon juice, garlic powder, salt, and black pepper.
  4. Mix until the cream cheese spread is smooth and the herbs are evenly distributed.
  5. Arrange the bread slices on a work surface and spread a thin, even layer of the cream cheese mixture over each slice, extending the spread close to the edges.
  6. Arrange the cucumber slices in an even layer over half of the prepared bread slices.
  7. Top with the remaining bread slices, placing the cream cheese side against the cucumbers.
  8. Gently press each sandwich together. Trim away the crusts with a sharp knife if making traditional tea sandwiches.
  9. Cut the sandwiches into small rectangles, triangles, or fingers and serve soon after assembling.

Notes

  • English cucumber works particularly well because its skin is tender and it contains relatively few seeds.
  • Pat the cucumber slices thoroughly dry to help prevent soggy sandwiches.
  • Spread the cream cheese mixture across the bread to create a moisture barrier between the cucumber and bread.
  • Add fresh parsley, mint, or extra dill for additional herb flavor.
  • Herb, chive, or vegetable-flavored cream cheese can replace plain cream cheese for a quicker variation.
  • Thinly sliced radishes, sprouts, or finely chopped green onion can be added for extra texture and flavor.
  • Add extra lemon juice or lemon zest for a brighter, tangier spread.
  • Soft rye, pumpernickel, or multigrain bread can replace white or whole-wheat sandwich bread.
  • For the best texture, assemble the sandwiches shortly before serving. If necessary, refrigerate assembled sandwiches in an airtight container for a few hours.
  • The cream cheese spread can be prepared 2 to 3 days ahead and stored separately in the refrigerator.
  • Freezing is not recommended because the cucumber and cream cheese filling can change texture after thawing.
