Cucumber Sandwich is a classic, refreshing snack or light lunch made with thinly sliced cucumbers layered between soft bread and creamy spreads. Perfect for tea time, picnics, or a quick healthy bite.

Ingredients

Bread slices (white, whole wheat, or gluten-free) – 4 slices
Fresh cucumber, thinly sliced – 1 medium cucumber
Cream cheese or dairy-free spread – 4 tbsp
Fresh dill or chives (optional) – 1 tbsp chopped
Salt – to taste
Pepper – to taste
Lemon juice (optional) – 1 tsp

Instructions

  1. Lightly toast the bread slices if desired.
  2. Spread a thin layer of cream cheese or dairy-free spread evenly on each slice.
  3. Arrange thin cucumber slices over half of the bread slices.
  4. Sprinkle with fresh dill or chives, salt, pepper, and a little lemon juice if using.
  5. Top with the remaining bread slices, spread side down, to form sandwiches.
  6. Trim the crusts if desired and cut sandwiches into halves or quarters.
  7. Serve immediately or chill briefly before serving.
