Ingredients

Fresh cucumber, thinly sliced – 1 medium cucumber
Fresh mozzarella cheese, sliced – 4 oz
Ripe tomatoes, sliced – 1 medium tomato
Fresh basil leaves – 8 leaves
Balsamic glaze or reduction – 2 tbsp
Olive oil – 1 tbsp
Salt and pepper – to taste
Bread of choice (ciabatta, baguette, or sandwich bread) – 4 slices

Instructions

  1. Slice cucumber, mozzarella, and tomatoes evenly.
  2. Lightly toast the bread slices if desired.
  3. Layer cucumber slices on one slice of bread, followed by tomato slices and mozzarella.
  4. Tuck fresh basil leaves between the layers.
  5. Drizzle olive oil and balsamic glaze over the fillings.
  6. Sprinkle salt and freshly ground black pepper to taste.
  7. Top with the other slice of bread and gently press together.
  8. Slice the sandwich in half and serve immediately.
