Ingredients

  1. 2 cups cooked chicken, shredded
    1 cup shredded cheddar cheese
    1/2 cup cream cheese, softened
    1/4 cup mayonnaise
    2 tablespoons ranch dressing mix
    1 tablespoon lime juice
    1 teaspoon chili powder
    1/2 teaspoon cumin
    1/2 teaspoon garlic powder
    1/4 teaspoon salt
    1/4 teaspoon black pepper
1/2 cup red bell pepper, finely diced
1/2 cup corn kernels (fresh, frozen, or canned)
    1/4 cup fresh cilantro, chopped
    4 large flour tortillas

Instructions

Prepare the Filling: In a large bowl, combine the shredded chicken, cream cheese, mayonnaise, ranch dressing mix, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Stir until well combined.

  1. Add Vegetables: Add the red bell pepper, corn, and cilantro to the chicken mixture. Mix everything together until the ingredients are evenly distributed.
  2. Assemble the Pinwheels: Lay a flour tortilla flat on a clean surface. Spread a generous amount of the chicken mixture over the tortilla, leaving a small border around the edges. Sprinkle a little shredded cheddar cheese over the chicken mixture.
  3. Roll the Pinwheels: Starting from one edge, tightly roll the tortilla, ensuring the filling stays in place. Once rolled, slice the tortilla into 1-inch wide pinwheels.
  4. Serve: Arrange the pinwheels on a platter and serve immediately, or refrigerate for 30 minutes before serving to let the flavors meld.

Notes

  1. Spicy Kick: For a spicier version, add finely chopped jalapeños or a dash of hot sauce to the chicken mixture.
  2. Vegetarian Option: Replace the chicken with black beans or a medley of roasted vegetables for a vegetarian-friendly pinwheel.
  3. Different Cheese: Swap the cheddar cheese for pepper jack or Monterey Jack cheese for a little extra heat and flavor.
  4. Swap the Dressing: Use a Southwestern dressing or salsa instead of ranch for a different twist on the flavor.
