A creamy and flavorful hummus blended with roasted cauliflower, adding a rich, slightly smoky depth to this classic dip.

Ingredients

  • 3 cups cauliflower florets
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika or cumin (optional)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tbsp lemon juice
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 24 tbsp cold water
  • Olive oil for garnish
  • Pinch of paprika for garnish
  • 2 tbsp fresh parsley
  • Extra roasted cauliflower pieces

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet.
  2. Toss cauliflower with olive oil, salt, black pepper, and optional spices.
  3. Spread on the baking sheet and roast for 25-30 minutes until golden and crispy.
  4. Let cauliflower cool slightly.
  5. In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and black pepper.
  6. Add roasted cauliflower and blend until smooth.
  7. Add cold water gradually until a creamy consistency is reached.
  8. Taste and adjust seasoning as needed.
  9. Transfer to a serving bowl and drizzle with olive oil.
  10. Garnish with paprika, parsley, and extra roasted cauliflower.
  11. Serve with pita, crackers, or vegetables.

  • Roast cauliflower well for maximum flavor.
  • Blend longer for extra smooth texture.
