Crispy Persian Rice, also known as Tahdig, is a classic Persian dish featuring fluffy basmati rice with a golden crunchy crust. This elegant and aromatic recipe creates a delicious contrast of textures perfect for pairing with stews, kebabs, and vegetables.

Ingredients

  • 2 cups basmati rice
  • 8 cups water
  • 2 tablespoons salt
  • 3 tablespoons butter or vegetable oil
  • 1/4 teaspoon saffron threads
  • 2 tablespoons warm water
  • 1 plain yogurt
  • 1 egg yolk
  • Barberries (optional topping)
  • Pistachios (optional topping)
  • Fresh herbs (optional topping)

Instructions

  1. Rinse the basmati rice several times under cold water until the water runs clear.
  2. Soak the rice in cold water with 1 tablespoon of salt for at least 30 minutes.
  3. Bring 8 cups of water to a boil in a large pot.
  4. Add the soaked rice and cook for 6 to 8 minutes until the grains are slightly tender but still firm in the center.
  5. Drain the rice and rinse briefly with lukewarm water.
  6. In a small bowl, dissolve the saffron threads in warm water.
  7. In another bowl, mix 1 cup of the cooked rice with yogurt, egg yolk, and half of the saffron mixture.
  8. Heat butter or oil in a nonstick pot over medium heat.
  9. Spread the yogurt-rice mixture evenly across the bottom of the pot to form the crust.
  10. Layer the remaining rice gently on top in a mound shape.
  11. Drizzle the remaining saffron mixture over the rice.
  12. Cover the pot lid with a clean kitchen towel and place it tightly on the pot.
  13. Cook over medium heat for 10 minutes, then reduce the heat to low and steam for 35 to 40 minutes.
  14. Remove the pot from heat and let it rest for 5 minutes.
  15. Carefully invert the rice onto a serving platter so the crispy crust remains on top.

Notes

  • Use thin potato slices at the bottom of the pot for potato tahdig.
  • Lavash bread can replace the yogurt mixture for a different crispy crust.
  • Add turmeric for extra color and warmth.
  • Mix barberries and pistachios into the rice for a festive presentation.
  • Fresh dill or herbs can be added for an herbed variation.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat gently in a skillet or oven to restore crispiness.
