Ingredients

  • 1 pound whole button or cremini mushrooms, cleaned and patted dry
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • 1 cup panko breadcrumbs
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • 2 tablespoons chopped fresh parsley (optional)
  • Ranch dressing or marinara sauce, for serving

Instructions

  1. Clean the mushrooms thoroughly and pat them completely dry with paper towels.
  2. Place the flour in one shallow bowl.
  3. Whisk together the eggs and milk in a second bowl.
  4. Combine the panko breadcrumbs, Italian-style breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper in a third bowl.
  5. Coat each mushroom in flour, dip into the egg mixture, then coat thoroughly in the breadcrumb mixture.
  6. Heat the vegetable oil to 350°F (175°C) in a deep skillet or heavy pot.
  7. Fry the mushrooms in small batches for 3 to 4 minutes until golden brown and crispy.
  8. Transfer to a paper towel-lined plate to drain excess oil.
  9. Garnish with chopped parsley if desired and serve immediately with ranch dressing or marinara sauce.
