Crispy Buffalo White Bean Tacos combine crunchy roasted white beans coated in buffalo sauce with fresh vegetables and a creamy lime drizzle. This flavorful vegetarian meal is quick, satisfying, and perfect for weeknight dinners or taco night.

Ingredients

  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup buffalo sauce
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup red cabbage, thinly sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely diced
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon water
  • Pinch of salt
  • Sliced avocado (optional)
  • Fresh cilantro (optional)
  • Crumbled feta or cotija cheese (optional)
  • Extra buffalo sauce (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) or preheat an air fryer to 400°F (204°C).
  2. Pat the white beans dry with paper towels.
  3. Place the beans in a large bowl and toss with olive oil, garlic powder, paprika, onion powder, salt, and black pepper.
  4. Spread the beans on a baking sheet or in the air fryer basket.
  5. Roast for 18–22 minutes in the oven or cook for 12–15 minutes in the air fryer, shaking halfway through.
  6. Transfer the crispy beans to a bowl and toss with the buffalo sauce.
  7. In a small bowl, whisk together the sour cream, lime juice, water, and salt.
  8. Warm the tortillas in a skillet or microwave.
  9. Fill each tortilla with lettuce, cabbage, tomatoes, and red onion.
  10. Top with the buffalo white beans and drizzle with the creamy lime sauce.
  11. Garnish with avocado, cilantro, cheese, or extra buffalo sauce if desired.
  12. Serve immediately.

  • For a vegan version, use a dairy-free yogurt or sour cream alternative.
  • Black beans or chickpeas can be substituted for white beans.
