Ingredients

1 can black beans, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

6 small corn tortillas

1 tablespoon vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3-4 minutes, until softened.
