A rich and creamy vegan queso made with wholesome ingredients, perfect for dipping or drizzling over your favorite dishes.

Ingredients

  • 1 cup raw cashews (soaked)
  • 1 cup unsweetened plant-based milk
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1/2 cup diced tomatoes with green chilies (optional)

Instructions

  1. Soak cashews in hot water for at least 10 minutes, then drain.
  2. Add soaked cashews, plant-based milk, nutritional yeast, lemon juice, olive oil, and spices to a blender.
  3. Blend until completely smooth and creamy.
  4. Pour the mixture into a saucepan and cook over medium heat, stirring frequently until thickened.
  5. Stir in diced tomatoes with green chilies if using, and heat through.
  6. Serve warm with chips, vegetables, or as a topping.

Notes

  • Adjust thickness by adding more plant-based milk if needed.
  • For a spicier queso, add jalapeños or hot sauce.
  • Store leftovers in the refrigerator for up to 4 days and reheat gently.
  • Soaking cashews longer will yield a smoother texture.
