Creamy Pumpkin & Mushroom Risotto is a rich and comforting dish made with velvety pumpkin puree, savory mushrooms, and creamy arborio rice. This elegant risotto delivers warm seasonal flavors and a luxurious texture perfect for cozy dinners or special occasions.

Ingredients

  • 1 1/2 cups arborio rice
  • 1 cup pumpkin puree
  • 10 oz mushrooms, sliced
  • 1 small onion or shallot, finely diced
  • 3 cloves garlic, minced
  • 5 cups vegetable broth
  • 1/2 cup white wine
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup parmesan cheese, grated
  • 1 tbsp fresh thyme or sage, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • Fresh parsley for garnish

Instructions

  1. Heat the vegetable broth in a saucepan and keep warm over low heat.
  2. Heat the olive oil and butter in a large skillet or saucepan over medium heat.
  3. Add the mushrooms and cook until browned and tender, about 6 to 8 minutes. Remove half for garnish if desired.
  4. Add the onion or shallot and cook until softened. Stir in the garlic and cook until fragrant.
  5. Add the arborio rice and stir for 1 to 2 minutes until lightly toasted.
  6. Pour in the white wine and cook until mostly absorbed.
  7. Add the warm broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  8. Continue cooking until the rice becomes creamy and tender, about 25 minutes.
  9. Stir in the pumpkin puree, parmesan cheese, thyme or sage, and nutmeg.
  10. Season with salt and black pepper to taste.
  11. Top with the reserved mushrooms and garnish with fresh parsley before serving.
