Ingredients
1 lb parsnips (peeled and chopped)
2 tablespoons butter or olive oil
1/3 cup heavy cream or milk
1 clove garlic (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg (optional)
Instructions
Peel and chop the parsnips into evenly sized pieces.
Place in a pot, cover with water, and add a pinch of salt.
Bring to a boil, then reduce heat and simmer for 15–20 minutes until very tender.
Drain well and return parsnips to the pot.
Add butter or olive oil, cream or milk, and garlic if using.
Blend with an immersion blender or transfer to a blender until completely smooth.
Season with salt, black pepper, and nutmeg if desired.
Adjust consistency with more cream or milk if needed and serve warm.
