Ingredients

  • 1 1/2 cups arborio rice
  • 1 lb shrimp, peeled and deveined
  • 3/4 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 small onion or shallot, finely diced
  • 5 cups chicken broth or seafood broth
  • 1/2 cup white wine
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes

Instructions

  1. Heat the broth in a saucepan and keep warm over low heat.
  2. Season the shrimp with salt and black pepper.
  3. Heat 1 tablespoon olive oil in a skillet over medium-high heat and cook the shrimp for 1 to 2 minutes per side until pink and cooked through. Remove and set aside.
  4. In a large saucepan, heat the butter and remaining olive oil over medium heat.
  5. Add the onion or shallot and cook until softened, about 4 minutes. Stir in the garlic and cook until fragrant.
  6. Add the arborio rice and stir for 1 to 2 minutes until lightly toasted.
  7. Pour in the white wine and cook until mostly absorbed.
  8. Add the warm broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  9. Continue cooking until the rice becomes creamy and tender, about 25 minutes.
  10. Stir in the parmesan cheese, lemon juice, and a little extra butter for richness.
  11. Return the shrimp to the pan and gently fold them into the risotto.
  12. Garnish with fresh parsley and red pepper flakes before serving.
