Creamy Mushroom and Leek Risotto is a rich and comforting vegan dish made with earthy mushrooms, tender leeks, and creamy arborio rice. This elegant dairy-free risotto is packed with savory flavor and perfect for cozy dinners or special occasions.

Ingredients

  • 1 1/2 cups arborio rice
  • 12 oz mushrooms, sliced
  • 2 leeks, cleaned and sliced
  • 3 cloves garlic, minced
  • 5 cups vegetable broth
  • 2 tbsp olive oil
  • 2 tbsp vegan butter
  • 1/4 cup nutritional yeast
  • 1/2 cup white wine
  • 1 tsp fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Instructions

  1. Heat the vegetable broth in a saucepan and keep warm over low heat.
  2. Clean and slice the leeks thoroughly to remove any dirt.
  3. Heat the olive oil and vegan butter in a large skillet or saucepan over medium heat.
  4. Add the leeks and cook until softened, about 5 minutes. Stir in the garlic and cook until fragrant.
  5. Add the mushrooms and cook until browned and tender.
  6. Stir in the arborio rice and cook for 1 to 2 minutes until lightly toasted.
  7. Pour in the white wine and cook until mostly absorbed.
  8. Add the warm vegetable broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  9. Continue adding broth until the rice becomes creamy and tender, about 25 minutes.
  10. Stir in the nutritional yeast, fresh thyme, and lemon juice.
  11. Season with salt and black pepper to taste.
  12. Garnish with fresh parsley before serving.
