Ingredients

  • Chicken breast, sliced or cubed
  • Pasta (penne, fettuccine, or your choice)
  • Heavy cream
  • Parmesan cheese, grated
  • Garlic, minced
  • Olive oil
  • Butter
  • Italian seasoning
  • Salt
  • Black pepper
  • Chicken broth
  • Spinach (optional)
  • Sun-dried tomatoes (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve some pasta water, then drain.
  2. In a skillet over medium heat, heat olive oil and cook chicken until golden and fully cooked. Remove and set aside.
  3. In the same pan, melt butter and sauté garlic until fragrant.
  4. Add chicken broth and simmer for a few minutes to reduce slightly.
  5. Pour in heavy cream and let simmer gently until thickened.
  6. Stir in parmesan cheese until smooth. Season with Italian seasoning, salt, and black pepper.
  7. Return chicken to the pan and add cooked pasta. Toss to combine, adding pasta water if needed.
  8. Stir in spinach and sun-dried tomatoes if using, and cook until combined.
  9. Serve hot with extra parmesan if desired.
